Mindy Simmons is an employee of the Springfield Nuclear Power Plant, whom Homer had an attraction for in "The Last Temptation of Homer."

Role in The Simpsons
In "The Last Temptation of Homer," Mindy Simmons was hired as an engineer at the nuclear power plant. Homer quickly developed a crush on her, due to many similarities they had, such as a fondness for beer, junk food, and TV. Mindy was very beautiful and was equally attracted to Homer. When the two were sent to a National Energy convention in Capital City, Homer was tempted to enter into an affair with her, but in the end Homer stayed faithful to Marge.
Firing
In Another Simpsons Clip Show, Homer explains that after he turned Mindy down, she "hit the bottle pretty hard" and was fired from the nuclear power plant. However, she has been used as a background character at the plant in subsequent episodes (such as The Twisted World of Marge Simpson), suggesting she may have been rehired.
Alternate Reality
During a scene in "The Last Temptation of Homer," a spirit showed Homer the "disaster" of what would have happened if he married Mindy instead of Marge. They would have been very wealthy and Marge would have been the President of the United States.
