Role in The Simpsons
Mindy Simmons was hired as an engineer at the nuclear power plant, due to pressure on Mr. Burns to have at least one female employee. Homer quickly developed a crush on her, due to many similarities they had, such as a fondness for beer, junk food, and TV. Mindy was very beautiful and was equally attracted to Homer. He tries at great lengths to avoid her, but the two are selected to represent the nuclear power plant at the National Energy Convention in Capital City. Homer was encouraged by a fortune cookie to enter into an affair with her, but ends up deciding to Homer stay faithful to Marge.
Firing
After Homer turns Mindy down, she "hit the bottle pretty hard" and was fired from the nuclear power plant.
Alternate Reality
During a scene in "The Last Temptation of Homer," a spirit showed Homer the "disaster" of what would have happened if he married Mindy instead of Marge. They would have been very wealthy and Marge would have been the President of the United States.

The Movie
Mindy appears at church in the beginning attending Green Day's funeral, and in a bunch of other crowd scenes.
Similarities to Homer
According to The Homer Book, Mindy is the female equivalent of Homer: She likes cheeseburgers, a quick nap before lunch, foot-long chili dogs, whipped cream straight from the can, raspberry swirl doughnuts with a double glaze, drinking beer, watching TV, and roasted anything. When Homer tried to think unsexy thoughts in order to keep his mind off Mindy, she was doing the same thing about Homer. Mindy also has a tendency to drool like Homer when thinking about food and even uses his "Mmmmmm ...." catchphrase. The only difference between the two of them is that despite her overindulgent ways, Mindy has a slim and attractive figure, contrasted with Homer's overweight appearance.
