Mindy Simmons is a employee of Springfield Nuclear Power Plant, whom Homer had an attraction for in "The Last Temptation of Homer".

Role in The Simpsons
Mindy Simmons was an engineer at the plant, whom Homer developed a crush on, due to many superficial similarities the two characters had. When the two were sent to a National Energy convention in Capital City, Homer was tempted to enter into an affair with her, but in the end Homer went back to Marge
Firing
After Homer decided to pursue a relationship, has still been used as a background character at the plant in subsequent episodes (such as The Twisted World of Marge Simpson), suggesting she may have been rehired.
Alternate Reality
During a scene in the episode where Homer noticed his attraction, a spirit showed him the "disaster" of what would have happened if he married Mindy instead of Marge. However, it showed that they would have been very wealthy and Marge would have been married to the President of the United States.

She was part of the "Home Wreckers" bowling team seen in Team Homer. She was at the town hall meeting during Who Shot Mr. Burns? (Part One)
The Movie
She appears at church in the beginning attending Green Day's funeral and a bunch of other crowd scenes.
Similarities to Homer
According to The Homer Book, she is the female equivalent of Homer, and likes Cheeseburgers, a quick nap before lunch, foot-long chili dogs, whipped cream straight from the can, raspberry swirl doughnuts with a double glaze, Drinking beer and watching TV, and broasted anything. The only difference would be her attractive figure compared to Homer's overweight appearance.
